Sardines are a great food, high in omega-6 fatty acids, are
good tasting and quick to prepare and serve. The best-looking of the canned
varieties are the skinless and boneless varieties that are packed in soy oil.
Sardines are also sold packed in tomato sauce, hot pepper
sauce, or in mustard sauce. Sardines packed in mustard sauce usually contain
turmeric; a definite plus because of the spice’s healing powers. As they are
not packed in oil, they contain less fat.
Ingredients
- 4 sub rolls or steak rolls
- 4 teaspoons light mayonnaise or horseradish sauce
- 8 lettuce leaves
- 2 cans of sardines in olive oil
- 2 tomatoes, thinly sliced
- 4 slices onion
- 2 radishes, thinly sliced
Method
Spread a thin layer of mayonnaise or horseradish sauce over
a cut roll. Top with lettuce leaves, then 2 to 3 sardines, tomato slices, onion
slices, and finally radish slices.
