Ingredients
- 2 teaspoons canola or olive oil
- 1 onion finely chopped
- 2 teaspoons cumin
- ½ teaspoon ground coriander
- ¼ teaspoon turmeric
- 2 cups vegetable or chicken stock
- 2 cups quick brown rice
- 1 cup fresh or frozen peas
Preparation
In a large saucepan, heat the oil. Add the onion, cumin,
coriander and turmeric and cook for 10 minutes or until the onions begin to
soften. Add the stock and bring the mixture to a boil. Add the rice and cook
for about 5 minutes. Add the peas and cook another 5 minutes. Let stand 5
minutes, fluff the rice and serve.
